Der erste digitale Marktplatz f\u00fcr regionale Produkte f\u00fcr die Gemeinschaftsgastronomie ist Teil der neuen kantonalen Strategie zur Verkaufsf\u00f6rderung von Agrarerzeugnissen. Er umfasst zurzeit mehr als 4000 Artikel und gew\u00e4hrleistet die Logistik. Mehr als 70 Betriebe k\u00f6nnen hier einkaufen.<\/b><\/p>\n<p>\u00a0<\/p>\n<p>Das Projekt \u00abRegional kochen\u00bb wurde 2016 auf Initiative der\u00a0<a href=\"https:\/\/www.vs.ch\/de\/web\/sca\" target=\"_blank\" rel=\"noopener\">Dienststelle f\u00fcr Landwirtschaft<\/a>\u00a0lanciert und hat zum Ziel die Verwendung von Lebensmitteln aus der Region in der Gemeinschaftsgastronomie zu f\u00f6rdern. Seit 2020 m\u00fcssen alle Einrichtungen mit Gemeinschaftsk\u00fcchen, die dem Kanton Wallis geh\u00f6ren und deren Budget mindestens zu 50 % von Staatssubventionen gedeckt ist, oder die \u00f6ffentlich-rechtlichen Institutionen geh\u00f6ren, diesem Programm beitreten.<\/p>\n<p>Die verschiedenen Besichtigungen und diesbez\u00fcglichen Diskussionen mit Verantwortlichen von Gemeinschaftsk\u00fcchen haben deren Schwierigkeiten beim Einkauf von Agrarerzeugnissen aus der Region sowie beim Wissen um Angebote und Logistik aufgezeigt. Die Dienststelle f\u00fcr Landwirtschaft hat infolgedessen in Zusammenarbeit mit dem Label \u00abGr\u00fcne Gabel\u00bb und mit der IT-Unterst\u00fctzung der Walliser Firma Apcom RegioFoodVS entwickelt, den ersten digitalen Marktplatz f\u00fcr regionale Produkte f\u00fcr die Gemeinschaftsgastronomie. Die Apcom bietet zudem einen leistungsf\u00e4higen Logistikdienst an.<\/p>\n<p>\u00a0<\/p>\n<p><strong>Eine digitale Plattform f\u00fcr Produzenten und Gastronomen<\/strong><br \/>Mithilfe von RegionFoodVS k\u00f6nnen einerseits alle interessierten Lieferanten im Kanton ihre Produkte anbieten, wobei vor allem der Saisonalit\u00e4t und der Verf\u00fcgbarkeit Rechnung getragen wird. Sie entscheiden frei \u00fcber das Angebot, das sie online stellen, und k\u00f6nnen es regelm\u00e4ssig erneuern. F\u00fcr jede Ware legen sie auch den Preis fest. Andererseits k\u00f6nnen dort Gastronomie-Fachleute mit der Garantie einkaufen, dass die meisten Produkte Walliser Herkunft sind, und das gesamte Angebot mit einem konzentrischen Ansatz und mit einem Label versehenen Vorgehen gefertigt wurde.<\/p>\n<p>Um die Produzenten zu \u00fcberzeugen, bei dieser Plattform mitzumachen, und so \u00fcber ein m\u00f6glichst umfangreiches und attraktives Angebot zu verf\u00fcgen, entschied der Kanton, die Lizenzen der 200 ersten angemeldeten Produzenten zu \u00fcbernehmen und diesen Beitrag f\u00fcr die Dauer von drei Jahren zu verl\u00e4ngern. Zurzeit umfasst der Marktplatz 4000 Artikel, die von rund 100 Produzenten angeboten werden.
